Chocolate Coated Banana "Ice-Cream".

I know, I know- you can't be fooled. This is not real ice cream. Once frozen however, bananas have a great creamy taste and texture that make for a delicious and healthy ice-cream alternative. You can just slice the banana and freeze as is, but I love to add a little extra on to "fancy" it up. Here's how I do it:

Ingredients: 

1 banana, sliced into segments

1 tablespoon cacao powder

1/4 cup coconut chips (or you can use shredded coconut instead)

Directions:

1) Crush the coconut chips into small pieces. Place the cacao powder into a plate or tray. Pat slices of banana into the cacao powder until covered. Dust off any excess powder. 

2) Top each slice with the coconut chips.

3) Place pieces of banana into a container and then freeze. Serve once completely frozen.

 I like to top these off with a little cashew cream, however they are also delicious on their own!
